LAMB WITH MINT Preparation time: 10 minutes Cooking time: 3 hours SERVES 4 INGREDIENTS 800g lamb shoulder cut in to cubes 1 carrot and 1 onion thinly sliced Juice of ½ lemon 1 small sprig of fresh mint 100 ml of double cream 100 ml of white wine 200 ml of water Salt and pepper METHOD To start add the cubed lamb in the Tajine with the carrot, onion, mint, white wine and water. Season to taste. Cook with lid on for 3 hours using the simmer function. When finished remove the lid and stir in the cream and lemon juice. This can be served with steamed diced cucumber. SAUTE OF PORK WITH HONEY Preparation time: 20 minutes Cooking time: 2 hours SERVES 4 INGREDIENTS 1 kg pork loin cut in to cubes 100 g bacon chopped 1 onion chopped 1 tbsp flour 1 tbsp oil 2 tbsp honey 300ml red wine 300ml water 4 sage leaves 1 sprig of thyme 2 bay leaves Salt and pepper
